2009

PAYETTE STARTS AS A DREAM

Mike Francis left corporate life as an industrial engineer at Boeing Co. in Seattle to engineer some industry of his own. He headed to Chicago to get an Associate’s Degree in Brewing Technology at Siebel Institute of Technology. He documents his journey in the first ever Payette Blog.


2010

THE JOURNEY BEGINS

Mike headed to his home turf in Boise to establish Payette Brewing Company with the desire to bring a production brewery to Idaho that offers a variety of awesome beers available on draft and in cans. Brewing and construction of the Tap Room begins.


2011

PAYETTE BREWING COMPANY OPENS

Payette Brewing Company opens for business with a 15-barrel brewing system, fermenters, and brite tanks rockin’ with beer + a Tap Room featuring eight beers on tap.


2011

FIRST KEG OF BEER SOLD

On Friday the 13th, 2011 the first keg of Payette beer was sold. Bittercreek Alehouse taps Outlaw IPA and helps begin the exciting new chapter of Mike’s dream.


2011

KEGS 4 KAUSE LAUNCH

Payette launched their Kegs 4 Kause program, where they give back to Idaho non-profits on a weekly basis by featuring them in the Tap Room and donating 50% of proceeds from beer sales directly to the organization. Payette continues this program and over the past 10 years, has donated tens of thousands of dollars to hundreds of nonprofits.


2012

THE FIRST CANS

Payette Brewing moves beyond draft beer and puts beer into cans with Mutton Buster Brown Ale and Payette Pale Ale! Payette was the first craft brewery in Idaho to can beer.


2012

BEST BREWERY BY THE BOISE WEEKLY

Payette was awarded “Best Brewery” by the Boise Weekly and since then, has won that title every single year.


2013

FLAGSHIP BREWS WIN THEIR FIRST AWARDS

Outlaw IPA wins GOLD at Idaho Brewers Festival and Mutton Buster Brown Ale wins “People’s Choice Award” at Reno’s CANFEST. Payette starts to get recognition for the quality made beer.


2014

SMALL BUSINESS OF THE YEAR

Payette was awarded Small Business of the Year by the Boise Metro Chamber of Commerce and was then in the top 10 for the National DREAM BIG Small Business of the Year award!


2015

BUILDING A NEW FACILITY

After Payette maxed out of brewing capacity at their original spot in Garden City, they began construction on their new spot to allow more space for brewing and a larger Tap Room. Formerly Bronco Elite Athletic Facility, the space was perfect for building a large brewhouse and Tap Room in the heart of Boise, Idaho along the Boise River.


2016

NEW BREWERY OPENS!

After a year of construction, Payette opened the doors of the new facility and started the first batches of beer on the new 60-barrel brew system! The Tap Room and Beer Garden quickly became an epicenter of Boise and an awesome spot for the community.


2018

EXPANSION INTO NEW TERRITORIES

Payette launches in Colorado, making that the 8th state for distribution!


2019

16-OUNCE SMALL BATCH BREWS

Payette breaks from 12-ounce canned 6-packs and ventures down a new path with 16-ounce small batch brews. This gave the marketing team and brewers a chance to spread their wings and create incredible beers with fun artwork and creative recipes.


2020

NEW CANS, SAME GREAT BEER

Payette Brewing elevates their branding by giving their canned beers a new look, same vibe. Payette launches the can refresh with three new beers, Sofa King Sunny Hazy Pale Ale, Urban Surfer Citrus Wheat, and Embers Raspberry Vanilla Porter. Shortly after, each beer debuted their new, slick look.


2020

MAKING BOISE’S FAVORITE BEER GARDEN

An 11,000 square-foot grassy area featuring a brand new fire pit, bocce ball court and other outdoor yard games. Payette added a shaded grassy area with picnic tables, gliding benches and a hop garden for guests to relax and enjoy!


2021

BEST OF SHOW AT THE NORTHWEST AMERICAN ADVERTISING AWARDS

Payette’s new can designs take home Best of Show, gaining recognition for being some of the best looking beer cans.

BEER PIONEER

Mike Francis left corporate life as an industrial engineer at Boeing Co. in Seattle to engineer some industry of his own. After receiving an Associate’s Degree in Brewing Technology from Chicago’s Siebel Institute of Technology, followed by a stint at Schooner Exact Brewing in Seattle, Mike headed to his home turf of Boise in 2010 to establish Payette Brewing Company. Payette opened in 2011 and is proud to celebrate 10 years of beer!

LIVING UP TO OUR NAME

We chose the name Payette because it fits the way we live and work. François Payette was a French Canadian trapper whose name and memory is enshrined among numerous Idaho landmarks. The name has since become synonymous with an adventurous spirit that pervades Idaho’s year-round outdoor lifestyle.

BREWING

We moved into our second brewing facility in June of 2016, just a few miles away from our original brewery in Garden City, ID. The expansion has allowed our capacity to grow and create more opportunities for one-off and specialty beers. The new facility utilizes a sixty-barrel brewing system, 240-barrel fermenters, brite tanks and a canning line. Features of the brewery include a centrifuge, hop cannon and full lab.

CANNING LINE

We package our beer on a twelve-head rotary canning line capable of filling forty cans per minute. Features of the line include a date coder that prints the “packaged on” date on the bottom of the cans and fill level inspector to ensure that only properly filled cans go to market. Our cartoner is capable of putting the cans in both twelve and twenty-four pack boxes. 

QUALITY CONTROL PROGRAM

It starts with our ingredients. We source all of our raw materials from suppliers as close to home as possible providing the highest quality. Our brewers are incredibly knowledgable and withhold proper techniques to make sure the entire brewing process is done flawlessly, with their unique flair. 

In 2015, we created a full-time Quality Control Program at Payette Brewing with an extensive lab for our head brewer and full-time lab technician. We make sure the product that leaves our doors is the absolute highest quality possible. Our brewers and production team implement Quality Procedures to ensure our beers are the best they can be and consistent.

ENJOY QUALITY CRAFT BEER IN THE HEART OF BOISE

Our Tap Room is a great place to enjoy our beer on tap and gather with friends. We are located along the Boise River in Downtown Boise and are open seven days a week. We offer twenty beers on tap, local wine from Split Rail and Cinder + cider from Meriwether and Highpoint, non-alcoholic options, merchandise for sale and a wide variety of beer to-go. FIRST COME FIRST SERVE

We do not reserve tables in our Tap Room or Beer Garden and operate on a first come first serve basis. If you are interested in renting our designated area in the Beer Garden for your upcoming event, please see our Event Page HERE.

SUMMER CONCERT SERIES

Enjoy live music at the brewery all year long every other Saturday from 5pm – 9pm. Featuring numerous local artists, that will have you movin’ and groovin’ —with a cold beer in hand, of course!

Starting in July till the end of August, we will be hosting live music every Saturday in the Beer Garden during our Summer Concert Series.


SIT BACK AND RELAX IN OUR SPACIOUS BEER GARDEN

Just outside the Tap Room, our Beer Garden is your go-to place to enjoy quality craft beer with friends any day of the year. Experience our 11,000 square-foot Beer Garden featuring a 10-foot fire pit, bocce ball court and other outdoor yard games, food truck fare, shaded grassy area with picnic tables, a stage featuring local + regional acts, and a hop garden. We always welcome well behaved dogs on leashes & people of all ages.

This exciting development is off and running in the Payette Tap Room and Beer Garden!

We’ve recently collaborated with Chef Michael Large of Queens Food Trailer to craft a rotating menu of high quality pub style food that pairs perfectly with our most popular beers on tap. Our Tap Room offers this menu every day from Chef Michael’s in-house, all-from-scratch cooking trailer, as an alternative to our ever-changing menus from our rotating food trucks. This will create some consistency for our guests, giving them a familiar menu they know is waiting for them in the Tap Room and Beer Garden.

We are thrilled at the opportunity to continue to serve our Tap Room guests and local beer lovers with an elevated experience that keeps them coming back and sticking around while they’re here.

MEET CHEF MICHAEL

Chef Michael has worked in California, Texas, and Louisiana in restaurants, hotels, and catering events. He moved to Idaho with his wife and two boys to raise his family and work as the Executive Chef of Chandlers Steakhouse & Seafood for 3 years. He established Queens Food Trailer after deciding it was time to work for himself and pursue his dream of having a family owned and operated cooking establishment. Above all, Chef Michael is thrilled to have the opportunity to immerse himself in the Payette community, help to support Payette’s continued growth, and give people even more of a reason to call Payette’s taproom the best in town.

The menu below features local ingredients and fresh made-from-scratch recipes. As there will always be staple flavors, Chef Michael will rotate items depending on the season, beer pairings, or events. Not interested in a full meal? Our Tap Room also sells local snacks from City Peanut Shop and ice cream from The STIL to go with our beer, cider, wine, AnyTimer Cocktails, or non-alcoholic offerings.

Accessible from the Tap Room is a stairway that leads to our mezzanine overlooking the brewery production area. The mezzanine is a quiet place to hang out, drink beer, and take a self-guided tour using the signage that explains our history and the brewing process. The mezzanine is open during Tap Room hours (daily 12pm-10pm) unless closed for a private party. Go check it out!

HISTORY OF THE LEAGUE OF OUTLAWS

Payette Brewing opened in Garden City, Idaho in 2011 by Mike Francis. In the original facility, we started with a 15-barrel brew system, tanks and a funky Tap Room that housed 8 taps and some seating for the community to taste what we were all about.

Our Tap Room quickly became a popular destination for beer lovers to enjoy our original recipes and flagship brands: Outlaw IPA, Mutton Buster Brown Ale and Payette Pale Ale, to name a few.

As we started to get to know our customers, many became good friends and loyal Payette beer drinkers. Not just any Payette beer… Outlaw IPA (now known as Rustler IPA). We realized we needed something to celebrate the loyal Outlaw IPA consumers, and it wasn’t long after we opened when we created a specific club.

The League of Outlaws (TLO) was established in 2012 as a way to acknowledge and appreciate the loyal fans that have supported us from the beginning and helped shape who we are today. The format has evolved over the years, seen many friendly faces, and has been a fun opportunity for us to celebrate our loyal customers by offering special deals in the Tap Room.

Years later, The League of Outlaws lives on! Now in our new brewery and Tap Room (just a few miles from where we started and TLO was born) we are overwhelmed and humbled by the continuous support from the community. Opening our doors has allowed us to make new beer friends and evolve TLO to accommodate the progression of ideas and membership interest.

As a League of Outlaw member, you are welcomed into our Payette family with open arms, full pints and good conversations. We appreciate the support and enjoy getting to know the folks that give us the opportunity to continue doing what we love… brew good beer and have fun while doing it.

HOW TO JOIN

Join the Payette family! Sign up in the Tap Room with one of our beer tenders. You will pay the $100 fee, fill out a quick form, receive your member card and growler, and then you are good to go! After you receive your membership card, you can start to enjoy your perks, which expire one year after you sign up. Valid membership cards must be presented at the beginning of each transaction to receive deals.


MEMBERSHIP LENGTH

Your fee covers one year of being included in the Payette Brewing League of Outlaws. Membership begins when payment is made in the Tap Room and expires on the same day one year later.


RULES

• League of Outlaw memberships are valid for one person. If you share a tab with someone in the Tap Room, League of Outlaw deals only apply to the official paid member.

• To redeem your FREE beer of the month, you will simply ask the bartender who will then mark off the deal on a punch card behind the bar. (Punch cards will remain at the Brewery)

• Please note: Payette reserves the right to refuse service to anyone or remove membership status if needed.


MEMBERSHIP CARD

• You will receive a membership card after payment is made.

• Valid League of Outlaw member card must be kept with you and presented at the beginning of each transaction to receive member deals.

• If lost, you will get one new card for free. An additional lost card after that will result in a $5 replacement fee.
